Yasmin's Birthday

This month is quite busy ...I have been really running around to juggle all my to do list between work , my own business and of course my family. Not to mention my two children's birthdays, one is done and still one more to go...On top of that I have a dinner party in my house tomorrow to celebrate mother's day with my parents, and my in laws...I hope that it will be fun...
Now I promised to feature my daughter's birthday pictures...so here they are including the cake and the party favors...it was nice and simple...a sleep over cake, made a giant chocolate chip cookie and some Jello...then we went to the movies where they had popcorn and pop...head back home for some mini burgers and fries...need I to say more, they were stuffed but happy

Strawberries...another great S in Spring

Strawberries…another great thing associated with spring…I couldn’t resist but to pick up a box of the delicious jewels from the grocery store…the other day I did the same and served it with chocolate sauce…but I was in a different mood..I wanted to wrap the red rubies in a buttery puff pastry and top it off with splashes of powdered sugar…so I stemmed the strawberries, added ¼ cup of strawberry jam and let them set for about 15 minutes…this gave the puff pastry squares enough time to thaw a bit…filled them up (about 2 tea spoons). I folded the sides to cover and secured with a slivered almond…at 350 F and viola… yummy…don’t you just love spring!!!!

Though we had a couple of nice and warm days last month, winter is very much still here...it is windy and cold outside. Nonetheless, I really wanted to feel springy, so I decided to fix picnic food for lunch today...Homemade fried chicken, coleslaw, and a big batch of oven roasted veggies with all the colors of spring. All I had to do is cut it all up, put it in a tray lined with aluminum foil, for easy clean up afterwards

Coated them with olive oil, a sprinkle of salt and black pepper

, Closed it up and in the oven it went..thats it

I left in the over for 40 minutes then opend the top and broiled for another 5...yummy...I really can eat this by it self right from the pan...I served this with chicken but by all means you can serve it with pasta plain or add your favorite sauce; tomatoe, cream or pesto. Very healthy and springy, I also couldn't resist puting the pic of the fried chicken...well the veggies where healthy so don't you tell me that the chicken isn't, I tried to balance it out

I am glad that I decided to take this a step further ... from a website at http://www.manalsbites.net/ to a blog as well. I think people might tend to do exactly the opposite ... but it doesn't matter as long as you decide to take that step
I have always shared my passion for cooking with family and friends and I have to admit that I get mixed ractions from people, some might think that it is great that at least I have a passion and sometimes I get these funny looks like are you serious !!! kinda look ... the bottom line is that it doesn't matter .. at the end what matters are the sweet or hot dishes that makes my house always smell like a welcoming home ...!!! Welcome to my blog where I am hoping to share with you my food diaries ....
